POSITION SUMMARY

The Dishwasher is responsible for cleaning dishware, glassware, flatware, pots, and pans used by Plateia. The incumbent cleans the kitchen and special equipment including ovens, grills, refrigerators, freezers, etc., takes the garbage out, and assists with deep cleaning duties. The Dishwasher also assists kitchen staff with receiving and storing supplies from vendors.


Department Summary

"The Luskin Conference Center (LCC) is a 300,000-square-foot, 7-story property on the UCLA campus. The LCC is comprised of 254 guest rooms, approximately 25,000 square feet of meeting space, a 160-seat restaurant, a fitness center, and a business center. The LCC is an academic meeting and conference destination supporting UCLA's education and research mission.

 

The Luskin Conference Center is a no-tipping environment."


Key Responsibilities and Essential Functions

ʉۢ Wash and sanitize all dishware, glassware, flatware, etc. using the automatic dishwasher

ʉۢ Wash and sanitize all pots, pans, and utensils following the correct procedure per item

ʉۢ Inspect and rewash any items that were not thoroughly cleaned

ʉۢ Operate dishwasher according to instructions while keeping pace with the flow of incoming dishes

ʉۢ Maintain dishwasher, de-liming regularly as instructed by management and promptly reporting any malfunctions and necessary equipment repair

Cleaning and Sanitation

ʉۢ Wash and sanitize all machinery and cooking equipment, disassembling equipment as necessary, cleaning ovens, grills, refrigerators, freezers, steam kettles, etc.

ʉۢ Clean kitchen according to standard procedures, clean all mats and properly dispose of all boxes and garbage

ʉۢ Clean and sanitize kitchen drains, sinks, floors, and walls

ʉۢ Safely utilize and store all cleaning compounds, chemicals, and materials

ʉۢ Deep clean assigned areas

ʉۢ Clean and maintain the dumpster area and loading dock, hosing down the dumpster each time the trash is emptied

ʉۢ Treat the dumpster and surrounding area each time with enzymes to prevent odors

ʉۢ Keep the bailing area clean and free of cardboard overflow, regularly compressing cardboard and bailing to prevent back up

ʉۢ Assist kitchen staff with receiving and storing supplies from vendors

ʉۢ Store deliveries neatly per storage and refrigeration instructions, rotate old stock and inform management of any shortages or missing inventory items

ʉۢ Secure all food items and equipment to prevent loss due to theft, misuse or carelessness

ʉۢ Ensure all locked areas are secured before leaving at the end of the shift
