POSITION SUMMARY

The Banquet Captain provides team leadership and supervision for all aspects of served events while overseeing the successful execution of the assigned events. The incumbent maintains a high level of customer service while adhering to all food handling and sanitation guidelines. The Banquet Captain also supports the bar manager with alcoholic beverage service.


Department Summary

UCLA Catering provides catering services at the Luskin Conference Center, Housing & Hospitality meeting and event spaces, and locations around the greater UCLA campus. The department produces over 15,000 events a year. Available services range in size and scope from the UCLA Coffee Service to large-scale, VIP gala events.


Key Responsibilities and Essential Functions

Served Event Supervision

 • Responsible for the successful execution of full-service catered events, including timelines, decor, staffing, set-up, break-down, food staging, equipment and vehicle coordination, service, and customer interface

 • Anticipate staffing problems and act to ensure that events are not compromised by a labor shortage

 • Interact daily with Catering Sales staff regarding specific event details

 • Provide input to the culinary team on recipes and menus

 • Ensure sanitation and safety standards are met as mandated by Environmental Health and Safety, federal, and state laws

    ◦ Delivery service storage areas and equipment are clean and stored properly

    ◦ Cleaning and storing equipment

    ◦ Containment, removal, and disposal of trash at event sites

 • Analyze ongoing service needs and results and recommend changes in service standards to meet customer needs

 • Train team members on proper food handling and storage practices, gathering and loading equipment, driving delivery trucks, inventory control, sanitation, safety, and customer service

 • Instruct staff in merchandising and displaying of foods attractively, creatively, and appetizingly while sustaining proper food-handling procedures and safe food temperatures at all times

 • Drive catering vehicles to events and load and unload as needed

 • Provide input regarding a variety of service styles such as French, Continental, Buffet, BBQ, etc

 • Arrange food presentation and design for events

 • In conjunction with the alcoholic beverage supervisor, manage alcoholic beverage service at events

 • Ensure proper equipment gathering and transportation of event equipment to and from event sites to minimize damage and breakage per departmental standards

 • Communicate with all team members regarding customer counts and service guidelines

 • Provide gracious service to guests by anticipating their needs and taking the initiative to create service solutions accommodating their requests within the parameters of the department's targeted budget and program

 • Utilize body language such as eye contact, facial expressions, gestures, and posture that reflect an outgoing, friendly, attentive, and responsive communication to guests

 • Utilize clear communication skills, including active listening, with guests and team members that ensure a balance in speed of service with respect and hospitality

 • Ensure that personal grooming and uniforms project the professional image necessary to gain guests' confidence

Staff Management

 • Provide leadership, direction, motivation, and counsel ensuring that campus departmental policies and procedures are administered uniformly and clearly and that work activity conforms to departmental guidelines and the overall mission of the University and Catering

 • Establish standards of performance and ensure those standards are maintained uniformly

 • Ensure staff is trained on procedures and daily tasks

 • Supervise staff to strictly adhere to sound fiscal, ethical, accounting, and timekeeping standards

 • Implement personnel policies following University and departmental guidelines

 • Maintain a positive working relationship with all staff and management
